Cherry Cream Coffee Cake Recipe - How to make coffee cake recipe

Easy coffee cake begins with crescent rolls and is filled with a cherry and pecan cheesecake filling, then topped with miniature chocolate chips and drizzled with a simple glaze. It goes together quickly with the aid of a food processor, but you may also use standard chopping and mixing methods. Feel free to substitute raisins or other dried fruits for the cherries and/or your favorite nuts. The chocolate chips on top are optional, but oh so good.

Ingredients:
* Filling:
* 12 ounces (1-1/2 large 8-ounce packages) cream cheese
* 1 cup granulated white sugar
* 1 large egg
* 1 teaspoon pure vanilla extract
* 1 cup dried cherries
* 1/2 cup chopped pecans

Cake:
* 2 packages (8-count) refrigerated crescent rolls, divided use
* 1/2 cup chocolate chips

Icing Glaze:
* 1-1/2 cups powdered sugar
* 2 to 3 Tablespoons milk or cream
* 1/4 teaspoon almond extract

Preparation:
Preheat oven to 350 F. Line a 9 by 13-inch baking pan with nonstick foil.

Make the filling first by placing cream cheese, sugar, egg, and vanilla into the bowl of a food processor fitted with the metal blade. Process until combined. Add cherries and pulse until the cherries are coarsely chopped. Add pecans and pulse a couple of times, only until combined.

Open 1 tube of the crescent rolls and unroll the dough. Place in the bottom of the prepared pan and press to fit the bottom of the pan, sealing any perforations.

Spread evenly with the filling.

Open the remaining tube of crescent rolls and separate the triangles. Cut each triangle in half lengthwise so you have 16 thin triangles. Begin at one end of the pan, placing triangles across the width, stretching each dough triangle to fit the width of the pan, alternating to opposite sides of the pan. (The first triangle will stretch from top to bottom, the next from bottom to top, etc.) The top will be completely covered by the crescent dough, with the sides of the dough touching closely, but not overlapping.

Bake for 30 minutes. Remove from oven and immediately sprinkle evenly with the chocolate chips. Let cool to room temperature.

For the icing glaze, whisk together powdered sugar, milk or cream, and almond extract until smooth, adding just enough milk or cream to get to a barely drippable consistency. Spoon icing into a zip-top bag, squeeze out all the air, and seal. Snip a corner from the bottom of the bag and drizzle icing over the top of the coffee cake in a zig-zag pattern. Let sit, uncovered, for the icing to firm up about 1 hour. Cut and serve.

Yield: 24 to 36 servings, depending upon cut size

The Surinam cherry is a bush or small tree to 25ft in height. Plants can be trained as small bushes or hedge but can take on a more tree-like growth pattern. Flowering may occur several times a year, with a single moderate sized tree having thousands of flowers. Fruiting is generally profuse with hundreds or thousands of fruits per cycle and trees sometimes fruiting 2-3 times a year. There are some named varieties with most bearing red fruits. There are also lesser known, black ripening types.

Hardiness: It is adapted to both subtropical and tropical climates and is hardy to 22F when full grown.

Growing Environment: Plants like full sun and are drought tolerant, needing only moderate rainfall. Fruits develop and ripen in just 3-4 weeks from flowering. In subtropical and tropical climates the tree needs little care and seems to grow in most soil types. Irrigation is necessary in areas with minimal or seasonal rainfall.

Propagation: Almost always by seed, little attention is given to selection of superior varieties. Red type and black type forms usually come true to seed.

Uses: Eaten fresh, often with sugar, or processed into preserves.

The wild red-currant is a tasty treat indeed. If you're lucky enough to find a big haul of them, they can be used in any recipes for cultivated berries. If you find only a few, then they make a fine addition to summer puddings or wild fruit salads. The white-currant (pictured below) is essentially a variety of the red-currant which you might occasionally run into. It's a beautiful looking berry, but the main difference between this and its red cousin is cosmetic.

Typically ripe in June or July, but stragglers sometimes remain on the plants until August or September. Keep returning to the plants through the season, and make sure you look right under the leaves to find the succulent red fruit.
